The Ultimate Breakfast Burger Experience

These breakfast burgers are far more than just a meal; they are truly the ultimate breakfast of champions! But don’t let the name fool you – their incredible appeal extends well beyond the morning hours. Whether it’s a hearty lunch, a celebratory brunch, a quick dinner, or even a late-night snack, these burgers are guaranteed to satisfy any craving at any time. The moment one is placed before you, its irresistible aroma and visual appeal make it impossible to resist. Seriously, they are that delicious!

Unlike some breakfast burgers that simply add a fried egg to a standard beef patty, this recipe is meticulously crafted with every beloved element of a classic breakfast in mind. We’ve gone above and beyond to create a burger that truly embodies the spirit of a comforting, decadent morning feast, but with a gourmet twist. Each component is chosen to complement the others, creating a symphony of flavors and textures that you won’t find in a typical burger.

Imagine the perfect harmony of salty, sweet, and smoky notes from our homemade bacon jam, perfectly balanced by the rich creaminess of fresh avocado. Add to that the luscious, runny yolk of a fried egg, which acts as a natural, luxurious “sauce,” blending beautifully with the sharp, melty cheddar cheese. This combination of toppings might just be the best you’ll ever experience on a burger. But the magic truly begins with our unique burger patties. Instead of just using ground beef, we opt for a special 50/50 blend of high-quality ground beef and savory breakfast pork sausage. This ingenious mixture infuses the patties with an unparalleled depth of flavor and ensures they remain incredibly juicy, forming the perfect foundation for all those exquisite toppings.

To complete this culinary masterpiece, we recommend serving these magnificent burgers on a toasted brioche bun. Its subtle buttery sweetness and soft texture provide an ideal contrast to the rich and savory fillings. However, if you’re feeling adventurous and want to lean even further into the breakfast sandwich theme, a hearty toasted bagel offers another delicious option. No matter your bun choice, the inherent deliciousness of this breakfast burger guarantees an exceptional dining experience that you’ll want to savor again and again.

Essential Ingredients for Your Breakfast Burger

Crafting the perfect breakfast burger begins with selecting the right ingredients. Each component plays a vital role in creating the layered flavors and satisfying textures that make this recipe truly special. Here’s what you’ll need, along with some tips for choosing the best quality:

  • Ground Beef: For optimal juiciness and flavor, we recommend using an 80/20 lean-to-fat ratio ground beef. This balance ensures that your burger patties remain tender and moist when combined with the pork sausage, preventing them from drying out during cooking. The fat content is crucial for a truly rich and succulent burger experience.
  • Pork Sausage: You’ll want loose, breakfast-style pork sausage for this recipe, not links. The variety of sausage can significantly impact the final flavor profile. For an extra kick, “hot” sausage is an excellent choice. Alternatively, mild, regular, or even maple-flavored sausage can add a delightful sweetness that complements the savory elements beautifully. Choose based on your personal preference to customize your burger.
  • Salt: A simple yet essential seasoning to enhance the natural flavors of the meat patties. Don’t underestimate its role in bringing out the best in your burger.
  • Vegetable Oil: Used for toasting the buns and ensuring a smooth cooking surface for your eggs and burger patties. Any neutral-flavored oil will work effectively.
  • Cheddar Cheese: Sharp cheddar cheese adds a wonderfully tangy and robust flavor that melts beautifully over the hot patties. If you prefer, other excellent melting cheeses like American cheese for classic creaminess, gouda for a nutty sweetness, or muenster for a mild, buttery taste, can also be used.
  • Hamburger Buns: Brioche buns are highly recommended for their luxurious buttery flavor and slight sweetness, which perfectly complements the savory and sweet components of the breakfast burger. However, feel free to use your favorite regular hamburger bun. For a full breakfast sandwich experience, consider a toasted bagel or even an English muffin as an exciting alternative.
  • Avocados: You’ll need two ripe avocados for this recipe. To check for ripeness, gently squeeze the avocado; it should yield slightly to pressure. If it’s rock-hard, it needs a few more days to ripen at room temperature. If ripe avocados are hard to find, packaged mashed avocado (ensure it’s pure avocado, not guacamole) can be a convenient substitute.
  • Bacon Jam: This sweet and savory condiment is a game-changer for these burgers. You can prepare my homemade recipe up to a week in advance, which is highly recommended for its superior flavor. Alternatively, you can purchase bacon jam online or at specialty food stores for convenience.
  • Eggs: Four large eggs are needed, one for each burger. These will be fried to perfection, ideally with a runny yolk to create that delectable “sauce” when broken.

A quick note on bacon jam: If you’re opting to make homemade bacon jam, be sure to prepare it in advance, ideally following my dedicated bacon jam recipe before you begin making the burgers. 1. Prepare the Burger Patties: In a large mixing bowl, gently combine the ground beef, breakfast pork sausage, and salt. Mix just until ingredients are incorporated, being careful not to overmix, which can lead to tough burgers. Divide the mixture into eight equal portions, each weighing approximately 2 ounces, and roll them into neat balls. For precise measurement and consistent burger size, using a kitchen scale is highly recommended.
  2. Toast the Buns: These smash-style burgers cook incredibly fast, so having your buns ready beforehand is key! Heat a griddle or a large flat top over medium-high heat. Add a teaspoon of vegetable oil to the cooking surface. Place the hamburger buns face-down on the hot griddle. Toast them for about 1 minute, or until they achieve a beautiful golden brown color and slightly crispy edges. Remove from the griddle and set aside.
  3. Assemble Bun Toppings: Immediately after toasting, spread a generous layer of the delicious bacon jam onto the bottom half of each toasted bun. On the top half of each bun, gently spread half of a smashed avocado. Having these ready ensures a smooth assembly process once the burgers are cooked.
  4. Fry the Eggs: Lower the griddle heat slightly to medium. Carefully crack four eggs onto the griddle, making sure they are spaced apart. Cook for 4-6 minutes, or until the egg whites are fully set but the yolks remain wonderfully runny (if preferred). Use a spatula to carefully remove the fried eggs and transfer them to a clean cutting board or plate.
  5. Cook the Burger Patties: Increase the heat on your griddle or flat top back to high. Lightly spray the back of a large, sturdy metal spatula with cooking spray to prevent sticking. Place each of the prepared meat balls onto the scorching hot griddle. Using the back of the spatula, firmly and quickly smash each ball into a thin, flattened burger patty. Cook for exactly 1 minute to achieve a fantastic sear.
  6. Stack and Melt with Cheese: Flip each burger patty. Immediately place a slice of cheddar cheese on half of the cooked burger patties. Take the remaining patties (without cheese) and stack them directly on top of the cheese-topped patties, creating double-stacked burgers with a layer of melting cheese in the middle. Finally, place one of the freshly fried eggs on top of each double-stacked burger. Cook for an additional 30 seconds to allow the cheese to fully melt and the flavors to meld. Carefully remove the assembled burgers from the griddle and place them onto your prepared buns. Serve these masterpieces immediately and enjoy!

Optional Toppings and Variations for Your Breakfast Burger

While this breakfast burger recipe is absolutely perfect as written, it’s also incredibly versatile! Don’t hesitate to customize it to your personal taste. Whether you’re swapping bacon jam for crispy bacon slices or adding a luxurious drizzle of hollandaise sauce, the possibilities for delicious variations are endless. Explore the suggestions below to make this burger truly your own unique creation:

  • Add Fresh Greens: Introduce a refreshing counterpoint to the rich flavors by adding a layer of shredded lettuce, fresh spinach, or peppery arugula to your burger. These greens provide a delightful crunch and a vibrant freshness.
  • Crispy Bacon Slices: If you prefer the classic crunch of bacon over the sweet and savory spread of bacon jam, simply add strips of perfectly cooked bacon. For effortlessly crispy bacon, try my oven-baked bacon recipe. Thick-cut, applewood smoked bacon can add another layer of flavor and texture.
  • Decadent Caramelized Onions: If you choose to omit the bacon jam (which already contains caramelized onions), you can instead add a generous portion of sweet, slow-cooked caramelized onions directly to your burger. These can be prepared ahead of time and stored in the fridge for up to a week, or even frozen for up to three months, making meal prep a breeze. Check the link above for an easy step-by-step guide.
  • Hollandaise Sauce for a “Benedict” Twist: Elevate your breakfast burger to a new level of indulgence by drizzling it with a rich, creamy hollandaise sauce. This transforms the burger into a delightful fusion, reminiscent of a savory Eggs Benedict, adding a touch of gourmet sophistication.
  • Customize Your Patty: While the 50/50 blend of ground beef and pork sausage offers unparalleled flavor and juiciness, you can certainly adjust the patty to your preference. Make them with an all-beef patty for a more traditional burger experience, or go with all sausage patties for an intensely savory, breakfast-forward flavor.
  • Juicy Sliced Tomatoes: For an added burst of freshness and a touch of acidity, include thin slices of ripe tomato. Their juiciness provides a nice contrast to the richness of the other ingredients.
  • Pickled Jalapeños: For those who love a bit of heat, a few slices of pickled jalapeños can add a tangy, spicy kick that cuts through the richness and adds an exciting dimension.
  • Hot Sauce Drizzle: A dash of your favorite hot sauce, such as Sriracha or a smoky chipotle sauce, can bring a vibrant, spicy element to your burger, perfectly complementing the creamy avocado and egg yolk.

Expert Tips for Breakfast Burger Perfection

Achieving breakfast burger perfection is simple when you know a few key tricks. These tips will help ensure your burgers are juicy, flavorful, and perfectly assembled every time:

  • Prioritize Prep Work: This is arguably the most crucial tip! These smash-style burgers cook incredibly quickly—often in just about two minutes. To ensure a smooth cooking process and prevent anything from getting cold, always prepare and toast your buns and have all your toppings (bacon jam, smashed avocado, fried eggs, and any other desired additions) ready and waiting before you even start cooking the burger patties. This organized approach guarantees you can assemble your hot burgers without a hitch.
  • Ensure Your Griddle is Scorching Hot: For a truly exceptional burger, a properly preheated griddle or flat top is non-negotiable. Adding your burger patties (or any food, for that matter) to a sufficiently hot surface is essential for both food safety and achieving that coveted, crispy sear on the exterior, while locking in all the delicious juices inside. Since these breakfast burgers are a variation of smash burgers, they thrive on high heat, ideally between 400-450 degrees Fahrenheit. This intense heat creates a beautiful crust and prevents the patties from stewing.
  • Master the Smash Technique: When placing the meat balls on the hot griddle, use a large, flat metal spatula (sprayed with cooking spray to prevent sticking) to firmly and quickly press each ball down into a thin, uniform patty. The goal is to maximize contact with the hot surface for that signature crispy edge. Don’t press too hard or too long; a single firm smash is all you need to achieve the ideal smash burger texture.
  • Alternative Cooking Method: Use a Skillet: No griddle or flat top? No problem! You can absolutely make these delicious breakfast burgers in a sturdy skillet on your stovetop. Depending on the size of your skillet, you’ll likely be able to cook two, or perhaps four, burger patties at a time. A cast iron skillet or a cast iron griddle pan is ideal for its excellent heat retention and even cooking. A cast iron skillet can also be used on an outdoor grill for a smoky flavor twist.
  • Perfecting the Fried Egg: For the classic runny yolk that acts as a sauce, aim for a “sunny-side up” or “over-easy” egg. Cook until the whites are just set but the yolk is still liquid. If you prefer a firmer yolk, cook for an additional minute or two, or flip the egg over for an “over-medium” or “over-hard” finish.

What to Serve With Your Breakfast Burger

Burgers and potatoes are a classic pairing, making any form of breakfast potatoes or crispy hash browns a perfect match for these savory creations. You can also lean into more traditional burger sides like golden fries or crunchy tater tots. Here are some fantastic recipes to inspire your perfect meal pairing:

  • Air Fryer French Fries: Crispy, golden, and a healthier alternative to deep-fried.
  • Cheesy Grilled Potatoes: A comforting and flavorful side that’s perfect with any burger.
  • Air Fryer Tater Tots: The ultimate crispy, nostalgic side dish.
  • Animal Style Fries: Elevate your fries with a special sauce, grilled onions, and melted cheese.
  • Truffle Fries: For a sophisticated and aromatic side.
  • Crispy Hash Browns: A quintessential breakfast side that perfectly complements the burger.
  • Roasted Potatoes (Air Fryer or Oven): Simple, delicious, and versatile.
  • Fresh Fruit Salad: For a lighter, refreshing contrast, a colorful fruit salad can cut through the richness of the burger.

Servings: 4 burgers
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
Author: Whitney Bond
Course: Main Course
Cuisine: American

Ingredients

  • ½ pound ground beef, 80/20 lean
  • ½ pound pork breakfast sausage, loose style
  • 1 teaspoon salt
  • 1 teaspoon vegetable oil
  • 4 brioche buns, or preferred hamburger buns
  • ½ cup bacon jam, homemade or store-bought
  • 2 avocados, ripe, halved and smashed with a fork
  • 4 large eggs
  • 4 slices cheddar cheese, sharp recommended

Instructions

  • In a large bowl, combine the ground beef, breakfast sausage, and salt. Mix gently until just combined, then form the mixture into 8 two-ounce balls.
  • Preheat a large skillet, griddle, or flat top over medium-high heat.
  • When hot, add vegetable oil to the griddle. Place the hamburger buns face-down and toast for approximately 1 minute, or until browned around the edges.
  • Remove the buns from the griddle. Spread bacon jam on the bottom half of each bun, and half of a smashed avocado on the top bun. Set aside.
  • Crack four eggs onto the griddle and cook for 4-6 minutes, or until the whites are set and yolks are runny. Carefully remove the eggs and set aside.
  • Increase the heat on the griddle to high.
  • Spray the back of a large, flat metal spatula with cooking spray.
  • Place each meat ball on the hot griddle. Use the spatula to firmly smash each ball into a thin patty. Cook for 1 minute.
  • Flip the burgers. Place a piece of cheese on half of the patties.
  • Place the other plain patties on top of the cheese-topped patties to create double burgers. Top each with a fried egg.
  • Cook for 30 seconds more, then remove the burgers from the griddle and place them on the prepared buns. Serve immediately.

Notes

  • Preparation is Key: Always have your buns toasted and all toppings prepared before you start cooking the burger patties, as they cook very quickly (around 2 minutes).
  • Griddle Temperature: A hot griddle (400-450°F) is crucial for a good sear and juicy smash burgers. If using a skillet, a preheated cast iron skillet is ideal.
  • Bacon Jam Alternative: If you don’t have bacon jam, you can easily substitute with crispy slices of cooked bacon.
  • Skillet Option: If a griddle isn’t available, a large cast iron skillet can be used. Cook 2-4 patties at a time depending on skillet size.
