  • Medium-Rare (Recommended): Grill for 4-5 minutes per side. This is often considered the ideal doneness for flank steak, achieving a perfect balance of tenderness and flavor. Remove the steak when its internal temperature reaches 135°F (57°C).
  • Medium: Grill for 6-7 minutes per side. For a slightly firmer texture, cook until the internal temperature reaches 145°F (63°C).

Remember that the steak will continue to cook slightly (carryover cooking) after it’s removed from the grill, so factor this into your cooking times. Always allow the steak to rest properly before slicing for maximum juiciness.

Quick Tip: No Grill? No Problem! Use a Cast Iron Skillet

If you don’t have access to a grill or prefer cooking indoors, a cast iron skillet is an excellent alternative. Heat the cast iron skillet over high heat on your stovetop until it’s smoking slightly. Add a tablespoon of high-smoke-point oil (like avocado or grapeseed oil), then place the seasoned flank steak in the hot skillet. Cook for approximately 4 minutes per side for medium-rare, or adjust according to your preferred doneness, following the internal temperature guide above.
