- 4 medium zucchinis
- 1 tablespoon olive oil
- ½ cup red onion, diced
- 4 cloves garlic, minced
- 1 pound ground turkey
- 1 tablespoon oregano
- 1 teaspoon black pepper
- ½ teaspoon kosher salt
- ½ cup sun dried tomatoes, julienne
Optional Topping
- feta cheese crumbles
Instructions
- Preheat the oven to 400°F (200°C).
- Cut off the ends of each zucchini, then slice in half lengthwise. Use a spoon or knife to hollow out the zucchini, leaving approximately ¼ inch at the bottom and on the sides.
- Place the hollowed zucchini on a large baking sheet, lined with parchment paper, set aside.
- Add the olive oil to a large skillet on the stove over medium-high heat.
- Once the oil is hot, add the onion and cook for 3-4 minutes until softened, then add the garlic and ground turkey. Cook for 6-7 minutes, breaking up the turkey with a spoon, until it is fully browned.
- Add the oregano, black pepper, salt and sun dried tomatoes and simmer for 2-3 minutes to allow flavors to combine. Remove from the heat.
- Spoon the cooked meat mixture into the hollowed zucchini halves. Place the stuffed zucchini in the oven and bake for 10 minutes. Remove from the oven and top with feta cheese crumbles (optional).
