My husband, with his uncanny ability to nail a description, perfectly summarized this creation as “artichoke dip, but with a whole lot of garlic.” I couldn’t agree more, and honestly, I’m happy to borrow his astute observation! This luxuriously creamy Roasted Garlic Dip is an absolute dream come true for anyone who adores the rich, mellow notes of roasted garlic, the comforting flavor of garlic bread, or simply believes that there’s no such thing as too much garlic in a recipe.
It’s the kind of appetizer that sparks conversation, tantalizes taste buds, and leaves everyone reaching for just one more scoop. Forget subtle garlic hints; this dip embraces garlic in all its sweet, aromatic glory, transforming it into a spreadable, dippable masterpiece that will quickly become a cherished favorite in your recipe repertoire.
The Magic of Roasted Garlic: Why 100 Cloves?
You might be raising an eyebrow at the mention of 100 cloves of garlic. It sounds excessive, even a little mad, but trust me, it’s the secret to this dip’s unparalleled flavor and incredible depth. The transformation of raw garlic into roasted garlic is nothing short of culinary alchemy, and here’s precisely why such a generous quantity not only works but is absolutely essential for achieving true greatness in this recipe:
- Unlocking Sweet, Caramelized Flavors: The high heat of roasting initiates the Maillard reaction, a complex chemical process responsible for the browning and creation of new, desirable flavors. Much like caramelizing onions, roasting garlic slowly breaks down its complex sugars, resulting in a profoundly sweet, nutty, and slightly smoky profile. This process completely mellows garlic’s typically sharp and pungent raw flavor, making it incredibly palatable in large quantities. The fiery intensity dissipates, leaving behind only aromatic richness, transforming what could be an overwhelming ingredient into a harmonious, foundational flavor.
- Perfect Flavor Balance with Creamy Components: The roasted garlic paste is lovingly combined with tangy sour cream and rich mayonnaise. These dairy bases bring their own strong, zesty flavors to the table, creating a dynamic contrast. The inherent tanginess and creaminess of the sour cream and mayonnaise cut through the sweetness of the roasted garlic beautifully, ensuring that the dip is perfectly balanced and never cloying. Each ingredient plays a crucial role, creating a symphony of flavors where the sweet, caramelized garlic is complemented and enhanced by its creamy counterparts.
- Crafted for True Garlic Devotees: This recipe was conceived with the ultimate garlic lover in mind. It’s for those who appreciate garlic as a star ingredient, not just a background note. While you could certainly experiment with fewer cloves – say, 50 – to achieve a milder version, through repeated testing, I’ve discovered that 100 cloves hit that sweet spot. It delivers an unmistakably bold, yet incredibly smooth and nuanced garlic flavor that sets this dip apart from anything else you’ve tasted. It’s a celebration of garlic, unashamedly robust and utterly delicious.
The result is a dip that defies expectations, offering a taste experience that is both familiar and excitingly new. It’s rich without being heavy, flavorful without being overpowering, and utterly addictive. No matter how you choose to enjoy it, this Roasted Garlic Dip will undoubtedly become a topic of conversation, and perhaps, your secret weapon against culinary blandness (and maybe even vampires!).

Essential Ingredients for Your Ultimate Roasted Garlic Dip
Creating this show-stopping dip requires just a handful of quality ingredients, each playing a vital role in building its irresistible flavor and texture. Here’s a closer look at what you’ll need to gather:
- Roasted Garlic (Approximately 100 Cloves): This is the undisputed star of our dip. To achieve the required 100 cloves, you’ll typically need about 5 “average” sized garlic bulbs. Roasting transforms the garlic, making it sweet, mellow, and spreadable. While the basics are covered below, for a comprehensive guide with step-by-step photos on how to roast garlic perfectly, you can visit my detailed roasted garlic post. Remember, good quality, fresh garlic bulbs will yield the best flavor.
- Sour Cream (1 cup): Serving as the creamy, tangy backbone of the dip, sour cream provides a delightful richness and a subtle acidity that beautifully complements the sweetness of the roasted garlic. Opt for full-fat sour cream for the most luscious texture, though light sour cream can be used for a slightly less indulgent version. For a tangier, thicker alternative, consider using plain Greek yogurt.
- Mayonnaise (½ cup): The addition of mayonnaise contributes to the dip’s incredibly thick, smooth, and creamy consistency, adding another layer of richness. Its emulsified nature helps bind all the ingredients together seamlessly. If mayonnaise isn’t to your liking, or if you prefer an even denser dip, softened cream cheese can be a fantastic substitute, offering a similar creaminess with a different flavor profile.
- Lemon Juice (1 tablespoon, fresh-squeezed): A squeeze of fresh lemon juice is crucial for brightening the dip’s overall flavor. Its zesty acidity acts as a counterpoint to the rich and sweet notes of the roasted garlic and dairy, preventing the dip from tasting heavy and adding a refreshing pop that enhances every bite. Always opt for fresh-squeezed for the best results.
- Italian Seasoning (2 teaspoons): This classic blend of dried herbs infuses the dip with a warm, aromatic, and savory complexity. Typically comprising oregano, basil, thyme, marjoram, and rosemary, Italian seasoning harmonizes wonderfully with garlic. You can use your favorite store-bought blend, or for an extra fresh touch, try my homemade Italian seasoning recipe here. Adjust the amount to your preference.
- Salt (1 teaspoon): Salt is essential for enhancing and bringing out the full spectrum of flavors in the dip, especially the nuanced sweetness of the roasted garlic. Start with the recommended amount and remember to taste and adjust before serving. I often find myself adding a little more than initially suggested, but always season to your own preference. Fine sea salt or kosher salt are excellent choices.
- Fresh Parsley (for garnish, optional): A sprinkle of freshly chopped parsley not only adds a lovely splash of vibrant green color but also a fresh, herbaceous note that visually and gastronomically perks up the dip. It’s entirely optional, but highly recommended for presentation. You can also mix a small amount into the dip itself for an extra layer of freshness.
With these simple yet powerful ingredients, you’re well on your way to creating a dip that’s truly unforgettable!

Simple Steps to Your Creamy Roasted Garlic Dip
Making this incredible Roasted Garlic Dip is surprisingly straightforward, especially if you have your roasted garlic ready to go. The magic largely happens during the roasting process, which transforms ordinary garlic into a sweet, caramel-like paste. Let’s walk through each step:
Part 1: Roasting the Garlic (if not already prepared)
You’ll want to begin by roasting your garlic if you don’t already have a batch prepared. This crucial step can even be done up to 10 days in advance, storing the roasted cloves in an airtight container in the refrigerator until you’re ready to whip up the dip.
- Prepare the Garlic Bulbs: To get your garlic ready for roasting, first remove most of the papery outer layers from each bulb, being careful to keep the bulb intact. Next, use a sharp knife to slice about ¼ inch off the very top of each garlic bulb, exposing the tips of the individual cloves.
- Season and Wrap: Drizzle a generous amount of olive oil over the exposed cloves, ensuring each cut surface is well coated. You can gently rub the oil in. For ease of roasting, especially with 5 heads, you can place them all in a muffin tin. Alternatively, wrap each individual garlic bulb tightly in aluminum foil.
- Roast to Perfection:
- Oven Method: Place the foil-wrapped garlic bulbs (or muffin tin covered with foil) in an oven preheated to 400°F (200°C) and roast for approximately 45 minutes.
- Air Fryer Method: For a quicker option, place individually wrapped garlic bulbs in an air fryer set to 400°F (200°C) and cook for about 25 minutes.
The garlic is perfectly roasted when the cloves are incredibly soft, deeply golden brown, and easily squeezed out of their skins. For an in-depth visual guide and more tips on perfecting your roasted garlic, refer to my dedicated post on how to roast garlic.
Part 2: Assembling the Dip
Once your garlic is beautifully roasted and cooled slightly, the rest of the dip comes together in mere minutes:
- Mash the Garlic: Carefully squeeze all of the softened, roasted garlic cloves into a large mixing bowl. Using a sturdy whisk, a fork, or even a potato masher, thoroughly smash the cloves until they form a smooth, fragrant paste. Ensure there are no large chunks remaining for the best texture.
- Combine Wet Ingredients and Seasonings: To the bowl with the mashed roasted garlic, add the sour cream, mayonnaise, fresh lemon juice, Italian seasoning, and salt.
- Mix Until Smooth: Stir all the ingredients together vigorously until everything is thoroughly combined and the dip is perfectly smooth and uniform in color and texture.
- Chill for Flavor Development: Cover the bowl with plastic wrap or transfer the dip to an airtight container. Place it in the refrigerator to chill for a minimum of 30 minutes before serving. This crucial step allows all the flavors to meld and deepen, resulting in a much more delicious and harmonious dip.
- Serve and Enjoy: Once chilled, give the dip a final stir and serve it with your favorite dippers. Refer to the “Ways to Serve It” section below for a plethora of delicious ideas!

Recipe Tips for Perfection
- Always Allow for Chilling Time: This is arguably the most important tip! While tempting to dive in immediately, chilling the dip for at least 30 minutes (and ideally longer, up to several hours) allows the flavors to fully meld and deepen. The harmonious blend of sweet garlic and tangy creaminess intensifies as the dip rests, yielding a superior taste experience.
- Taste and Season Generously: Once the dip has chilled, give it a good taste test. This is your opportunity to adjust the seasoning. You might find it needs a little more salt to truly make the roasted garlic shine, or perhaps an extra squeeze of lemon juice for brightness. Don’t be shy about fine-tuning to your personal preference.
- Excellent Make-Ahead Option: This dip is fantastic for entertaining! It can be prepared up to 5 days in advance and stored in an airtight container in the refrigerator. In fact, making it ahead often enhances the flavor even further, making it a stress-free addition to any event or party spread.
- Freezing is Not Recommended: Unfortunately, sour cream and mayonnaise-based dips do not freeze well. The dairy components tend to separate when frozen and then thawed, resulting in an unappetizing, grainy, or watery texture that simply won’t be the same as the freshly made version. Enjoy it fresh!
- Creative Flavor Boosts and Add-ins: Don’t be afraid to experiment! My husband’s artichoke dip comparison sparked a brilliant idea:
- Roasted Garlic Artichoke Dip: Stir in a can of well-drained, chopped artichoke hearts for a delightful twist. The earthy artichoke complements the roasted garlic beautifully.
- Double the Caramelized Goodness: For an even deeper, sweeter flavor profile, fold in a small amount of finely chopped caramelized onions.
- Other Ideas: Consider adding a pinch of smoked paprika, a dash of hot sauce for a subtle kick, or finely chopped sun-dried tomatoes for an umami boost. Fresh chives or dill can also add a lovely herbaceous dimension.
- Mayonnaise Alternatives: If you’re not a fan of mayonnaise, you have options!
- Cream Cheese: Softened cream cheese (full-fat or light) can be used instead of mayonnaise for a thicker, richer dip with a slightly different tang.
- More Sour Cream/Greek Yogurt: While you can use additional sour cream (or plain Greek yogurt for a lighter option), be aware that the dip might not achieve the same thick, creamy consistency that mayonnaise provides.
- Don’t Be Afraid of the Garlic Quantity: While 100 cloves sounds like a lot, remember that roasting profoundly mellows the garlic. The sweet, buttery flavor is nothing like raw garlic. Trust the process – this dip is meant to be a celebration of roasted garlic!
Dietary Adaptations for Everyone
- Naturally Gluten-Free: This Roasted Garlic Dip is inherently gluten-free, making it a fantastic option for those with gluten sensitivities or celiac disease. Simply ensure that any accompanying dippers, such as crackers or bread, are certified gluten-free. Fresh vegetables are always a safe and delicious choice!
- Making it Dairy-Free/Vegan: To transform this into a dairy-free or even vegan-friendly dip, simply substitute the traditional sour cream and mayonnaise with their plant-based counterparts. There are many excellent dairy-free sour creams, vegan mayonnaises, and plant-based cream cheese products available on the market that will work beautifully without compromising on flavor or texture. Always check labels to ensure they meet your specific dietary needs.

Notes
- Always allow the dip to chill before serving. As the dip sits in the refrigerator, all of the ingredients begin to meld together. The flavors are enhanced and you’ll get the best results, even hours after the dip is made!
- Taste and season! Once the dip is chilled, try it out and feel free to add more salt if you’d like.
- This dip will last in the refrigerator for up to 5 days. So feel free to make it ahead of time if you’re planning to serve it an event or party.
- I do not recommend freezing the dip, as sour cream does not freeze well. The dairy will separate when frozen and the texture will not be the same once the dip is defrosted.
- Don’t like mayonnaise? No problem, use softened cream cheese instead! You can also use more sour cream, instead of the mayonnaise, but the dip won’t be as thick and creamy.
- This dip is naturally gluten free. Serve with veggies or gluten free crackers for dipping.
- To make this dip dairy-free, use dairy-free sour cream and a dairy-free mayonnaise or cream cheese product.
