The Irresistible Buffalo Chicken Smash Burger Experience

As part of the excitement surrounding the launch of my new eBook, Buffalo Style: Ditch the Wings, Keep the Sauce, I was inspired to create a fresh and innovative recipe that truly celebrates the beloved buffalo flavor. With smash burgers currently capturing everyone’s attention for their speed and incredible sear, it felt like the perfect opportunity to infuse that classic buffalo chicken goodness into this popular burger format. The result? A truly unforgettable **Buffalo Chicken Smash Burger** that’s both unique and utterly delicious.

What makes smash burgers so phenomenal is their inherent simplicity and lightning-fast cooking time. The patties are pressed thin onto a scorching hot griddle, creating a magnificent crust and locking in all the juicy flavor, all in about 10 minutes. For this specific recipe, I’ve taken ordinary ground chicken and transformed it by blending in my renowned chicken wing seasoning. This isn’t just any seasoning; it’s the **secret ingredient** that elevates these burgers from good to extraordinary, imparting a depth of savory, slightly spicy, and aromatic notes that perfectly complement the chicken.

Each perfectly cooked patty is then crowned with a slice of melted pepper jack cheese, introducing an additional layer of mild spice and creamy texture. The grand finale involves a generous drizzle of a signature sauce: a harmonious blend of classic buffalo sauce (I swear by Frank’s Red Hot!) and either creamy blue cheese or tangy ranch dressing. This combination creates a rich, cooling counterpoint to the heat, bringing all the quintessential buffalo flavors together in every bite.

But the customization doesn’t stop there! These chicken smash burgers are a blank canvas for your favorite toppings. Whether you prefer traditional burger accompaniments or crave a fresh twist with various vegetables, this recipe adapts effortlessly. It’s the ultimate solution for a flavorful, low-effort weeknight dinner or an impressive, fuss-free meal to enjoy while cheering on your favorite team.

Key Ingredients for Your Buffalo Chicken Smash Burger

Crafting the perfect Buffalo Chicken Smash Burger starts with selecting high-quality ingredients. Each component plays a crucial role in building the incredible layers of flavor and texture that make this recipe a standout. Here’s a closer look at what you’ll need and why:

  • Ground Chicken: Opt for ground chicken that is around 96% lean with 4% fat. This balance is critical; it provides just enough fat to keep your burger patties moist and succulent, preventing them from drying out during the rapid cooking process of a smash burger, while still offering a leaner alternative to traditional beef. You’ll typically find it alongside other chicken cuts in your grocery store’s meat aisle.
  • Chicken Wing Seasoning: This is truly the **SECRET INGREDIENT** that sets these burgers apart. Forget bland chicken patties; this homemade seasoning blend infuses the ground chicken with an explosion of flavor, making these far superior to any other chicken smash burger you’ve experienced. Click the link above for my easy recipe, which combines chili powder, sea salt, garlic powder, onion powder, paprika, and cayenne pepper. This robust mix is perfectly balanced to complement the chicken and the buffalo sauce.
  • Blue Cheese Dressing or Ranch Dressing: This creamy element is essential for balancing the heat of the buffalo sauce. Blue cheese dressing offers a pungent, tangy, and rich counterpoint, a classic pairing with buffalo flavors. If blue cheese isn’t your preference, ranch dressing provides a milder, herbaceous, and equally creamy alternative that still delivers that beloved cool, tangy finish.
  • Buffalo Sauce: The heart of the buffalo flavor! While I’m partial to Frank’s Red Hot Buffalo Sauce for its authentic taste and consistent heat, feel free to choose your favorite brand. Different brands can offer varying levels of spice and tang, allowing you to tailor the burger to your preferred heat level.
  • Vegetable Oil: A small amount of vegetable oil is used on the griddle to help achieve that perfect, crispy sear on your smash burger patties and prevent sticking. It also aids in toasting the buns to a beautiful golden brown.
  • Hamburger Buns: The foundation of any great burger! Brioche buns are my top choice due to their slightly sweet, rich flavor and wonderfully soft, yet resilient texture that holds up well to the juicy patties and sauces. However, feel free to use your preferred type of hamburger bun – potato buns, sesame seed buns, or even whole wheat options work just as well.
  • Pepper Jack Cheese: Adding pepper jack cheese introduces a delightful, subtle heat and a creamy, melty texture. It’s an excellent choice for those who appreciate an extra layer of spice. If you prefer a different cheese, sliced sharp cheddar cheese offers a robust, tangy flavor, Monterey Jack cheese provides mild creaminess, or a sprinkle of blue cheese crumbles can intensify the buffalo experience.
  • Optional Toppings (Sliced Jalapeños, Sliced Red Onion, Shredded Lettuce): These suggested toppings are carefully chosen to enhance the overall flavor and texture. Sliced jalapeños add a fresh, vibrant kick. Thinly sliced red onion provides a crisp, pungent bite that cuts through the richness. Shredded lettuce offers a refreshing crunch and coolness, perfectly complementing the warm, spicy chicken.

Step-by-Step Instructions for Perfect Smash Burgers

Mastering the Buffalo Chicken Smash Burger is incredibly straightforward, especially with these detailed steps and accompanying photos. For the complete list of ingredients and precise measurements, please refer to the dedicated recipe card at the bottom of this post. Let’s get cooking!

  1. Prepare the Creamy Buffalo Sauce. In a small bowl, combine your choice of buffalo sauce with either blue cheese or ranch dressing. Whisk until the mixture is smooth and well combined. This is your signature sauce that will tie all the flavors together. Set it aside, ready for assembly.
  2. Form the Seasoned Chicken Patties. In a large mixing bowl, gently combine the ground chicken with the chicken wing seasoning. Be careful not to overmix, as this can make the patties tough. Divide the seasoned chicken mixture into 8 equal portions, each weighing approximately 2 ounces. For precision, I highly recommend using a kitchen scale to ensure uniformly sized balls, which will cook evenly.
  3. Toast the Hamburger Buns. Since smash burgers cook incredibly fast, it’s crucial to prepare your buns first. Heat a griddle or large skillet over medium-high heat. Add about 1/2 teaspoon of vegetable oil to coat the surface. Place the hamburger buns, cut-side down, onto the hot griddle. Toast them for about 1 minute, or until the edges are nicely browned and slightly crispy. This adds texture and prevents the buns from becoming soggy.
  4. Assemble the Base of Your Burgers. Once toasted, remove the buns from the griddle. Spread a generous layer of your prepared creamy buffalo sauce onto the bottom half of each bun. Then, layer with shredded lettuce, thinly sliced red onions, and sliced jalapeños (or any other optional toppings you’ve chosen). Set these prepared bun bases aside.
  5. Smash and Cook the Chicken Patties (First Side). Increase the griddle heat to high. Place each of the seasoned chicken balls onto the scorching hot griddle. Immediately place a small piece of parchment paper over each chicken ball. Using the back of a large, flat spatula or a burger press, firmly smash each chicken ball into a thin, flat burger patty. Cook for exactly 1 minute on the first side. This high heat and smashing technique create an incredible crust.
  6. Flip, Add Cheese, and Stack. After 1 minute, carefully flip the smashed chicken patties. Immediately place a slice of pepper jack cheese onto half of the burger patties. Allow them to cook for another 1 minute on the second side, giving the cheese time to melt beautifully. Once cooked, take the plain chicken patties (without cheese) and place them on top of the cheese-topped patties, creating double-stacked burgers. Cook for an additional 30 seconds to allow the flavors to meld and the cheese to fully melt between the layers.
  7. Serve Immediately. Promptly remove the stacked buffalo chicken smash burgers from the griddle and place them onto your prepped bun bases. Close with the top bun and serve these sensational burgers without delay to enjoy them at their peak freshness and warmth.

Customize Your Smash Burger with Optional Toppings

One of the joys of making homemade burgers, especially these Buffalo Chicken Smash Burgers, is the freedom to customize! While the core recipe is a flavor powerhouse, adding your favorite toppings can elevate it even further, making each bite uniquely yours. You can stick with classic burger additions or get creative with veggies and sauces that perfectly complement the bold buffalo flavor. Here are some fantastic ideas to inspire you:

  • Caramelized Onions: For a gourmet touch, swap out the raw onions for deeply sweet, buttery caramelized onions. Their rich, umami flavor provides a wonderful contrast to the spicy chicken.
  • Pickled Onions: A bright and tangy pairing! The acidity of pickled onions cuts through the richness of the cheese and the heat of the buffalo sauce, adding a refreshing crunch.
  • Shredded Carrots: A simple addition that offers a lovely sweetness and satisfying crunch, often found alongside buffalo wings for good reason!
  • Fresh Cilantro Leaves: For a burst of herbaceous freshness, a few sprigs of cilantro can brighten up the entire burger and add an unexpected aromatic layer.
  • Sliced Tomatoes: Juicy, ripe tomato slices provide a classic burger component, adding a touch of acidity and freshness.
  • Sliced Avocado or Guacamole: Creamy avocado adds a cooling, rich texture and healthy fats, which beautifully mellow the spice of the buffalo sauce.
  • Spinach: Replace shredded iceberg lettuce with fresh spinach leaves for a slightly more earthy flavor and a boost of nutrients.
  • Crispy Bacon: Nothing beats the salty crunch of bacon on a burger. Use my easy oven-baked bacon recipe to get perfect, crispy strips every time and add an extra layer of savory indulgence.
  • Crispy Fried Onions: For an extra textural dimension and savory flavor, sprinkle some crispy fried onions on top.
  • Pickle Slices: Dill pickle slices offer a vinegary, briny crunch that is always welcome on a burger.
  • Ranch or Blue Cheese Crumbles: If you really want to lean into the classic buffalo pairing, add extra blue cheese crumbles directly to the patty or swap the dressing for a dollop of pure ranch.
  • Hot Honey Drizzle: For a sweet and spicy kick, a light drizzle of hot honey can be surprisingly delicious.
  • Sriracha Mayo: If you want to amp up the heat and creaminess, a sriracha mayo can be a fantastic alternative or addition to the buffalo sauce mix.

Remember, you can also simplify things by forgoing the blue cheese or ranch dressing entirely and just using a straight drizzle of buffalo sauce on your burgers for a purist, fiery experience.

Expert Tips for Buffalo Chicken Smash Burger Success

Achieving the perfect Buffalo Chicken Smash Burger is easy with a few key strategies. These tips will help ensure your burgers are juicy, perfectly seared, and incredibly flavorful every time, whether you’re a seasoned chef or a kitchen novice.

  • Prioritize Prep: Toast Buns and Arrange Toppings First. This is perhaps the most crucial tip for smash burgers. Because these thin patties cook in mere minutes (literally about 2 minutes total!), you won’t have time to scramble for buns or toppings once the cooking starts. Always toast your buns to golden perfection and have all your sauces, veggies, and cheese ready and assembled on the bun bases before the chicken even hits the griddle. This ensures a smooth, stress-free cooking experience and a hot burger.
  • “Protein Style” for a Healthier Twist. If you’re looking to reduce carbs or make this recipe gluten-free, easily transform your smash burger into a “protein style” meal. Simply ditch the traditional hamburger bun and instead, use two large, crisp leaves of iceberg lettuce as your bun. This provides a refreshing crunch and a satisfying way to enjoy all the buffalo chicken flavors without the added carbs.
  • Heat is Your Friend: Always Use a Super Hot Griddle. The secret to that irresistible, crispy crust on a smash burger is high heat. Ensure your griddle or skillet is smoking hot before adding the chicken patties. Aim for a temperature between 400-450 degrees Fahrenheit. Adding food to a hot surface isn’t just about safety; it’s essential for achieving that beautiful, flavorful sear on the outside while keeping the inside incredibly juicy and tender. Don’t rush the preheating process!
  • No Griddle? A Skillet Works Wonders. Don’t fret if you don’t own a griddle! You can absolutely make these delicious smash burgers in a large, heavy-bottomed skillet. A cast iron skillet is ideal as it retains heat exceptionally well, mimicking the griddle effect. Depending on your skillet’s size, you might only be able to cook 2 or 3 patties at a time to avoid overcrowding, which can lower the temperature and steam the burgers instead of searing them. If you have a cast iron griddle pan, that’s another excellent option that can be used on your stovetop or even on a grill.
  • Don’t Overmix the Ground Chicken. When combining the ground chicken with the seasoning, mix just until the ingredients are incorporated. Overmixing can lead to tougher, less tender patties. Gentle handling ensures a more delicate and pleasant texture.
  • Use Parchment Paper for Smashing. Placing a piece of parchment paper between your spatula and the chicken ball before smashing prevents the meat from sticking to your spatula, making it easier to create those thin, even patties.

What to Serve with These Flavorful Burgers

The perfect Buffalo Chicken Smash Burger deserves an equally fantastic accompaniment! While burgers and fries are a timeless duo, these spicy chicken delights also pair beautifully with a variety of side dishes, especially those that either complement the buffalo flavor or offer a refreshing contrast. Here are some delicious ideas to complete your meal:

  • Air Fryer French Fries: Crispy on the outside, fluffy on the inside, and healthier than deep-fried!
  • Animal Style Fries: Elevate your fry game with a savory, creamy, and slightly tangy topping.
  • Truffle Fries: For a more gourmet experience, these luxurious fries offer an earthy aroma that pairs surprisingly well.
  • Air Fryer Tater Tots: A fun and crispy alternative to fries that kids and adults alike will love.
  • Air Fryer Onion Rings: Sweet and savory with a satisfying crunch, a classic burger partner.
  • Buffalo Macaroni Salad: Double down on the buffalo flavor with this creamy, zesty pasta salad.
  • Buffalo Potato Salad: Another fantastic way to carry the buffalo theme throughout your meal.
  • Buffalo Zucchini Chips: A lighter, crispy veggie option that still delivers that spicy kick.
  • Creamy Coleslaw: The cool, tangy crunch of coleslaw provides a refreshing contrast to the spicy burger.
  • Sweet Potato Fries: A slightly sweeter alternative to regular fries, offering a different flavor profile.
  • Corn on the Cob: Grilled or boiled, sweet corn adds a lovely seasonal sweetness.
  • Simple Green Salad with Ranch Dressing: A light and fresh option to balance the richness of the burger.

Total Time: 13 minutes
Author: Whitney Bond
Course: Main Course
Cuisine: American

Ingredients

  • ¼ cup blue cheese dressing, or ranch dressing
  • ¼ cup buffalo sauce
  • 1 pound ground chicken, measured out into 8 – 2 ounce balls
  • 1 tablespoon chicken wing seasoning, click link for the recipe
  • ½ teaspoon vegetable oil
  • 4 hamburger buns
  • 4 slices pepper jack cheese

Optional Toppings

  • 1 jalapeno, sliced
  • ½ cup thinly sliced red onion
  • 1 cup shredded iceberg lettuce

Instructions

  • In a small bowl, combine the blue cheese dressing and buffalo sauce. Set it aside.
  • Combine the ground chicken and chicken wing seasoning, then measure out the seasoned chicken into eight 2 ounce balls of meat.
  • Heat a griddle over medium-high heat. Add the vegetable oil to the griddle and place the buns face-down on the griddle.
  • Toast the hamburger buns for approximately 1 minute, or until browned around the edges.
  • Remove the buns from the griddle, spread the buffalo blue cheese sauce on the bottom bun and top with sliced jalapenos, onions and shredded lettuce. Set aside.
  • Turn the heat on the griddle up to high.
  • Place each of the balls of seasoned chicken on the hot griddle. Place a piece of parchment paper on each ball of chicken, then use the back of a large spatula to smash the ground chicken into flattened burger patties. Cook for 1 minute.
  • Flip the burgers and place a piece of cheese on half of the burger patties. Cook for 1 minute.
  • Place the other burger patties, not topped with cheese, on top of the cheese-topped burger patties.
  • Cook for 30 seconds, then remove the burgers from the griddle and place them on the prepared buns.

Notes

  • To make this chicken burger recipe “protein style”, ditch the bun and replace it with two large leaves of iceberg lettuce. This is also a great option to make the burger gluten-free and low carb.
  • If you don’t have a griddle, you can make the burgers in a skillet. Depending on the size of your skillet, you’ll probably only be able to fit 2, or maybe 4, burger patties in the skillet at a time. I recommend a large cast iron skillet, or cast iron griddle pan if you have one available. A cast iron skillet can be used on the stove, or on a grill, to make these burgers.
