The Rich History of the Fried Onion Burger
The story of the fried onion burger is a captivating tale rooted in American resilience and resourcefulness, born during the challenging times of the Great Depression. In an era when ground beef was considered a luxury and onions were an inexpensive, readily available staple, a clever solution emerged. The Hamburger Inn, a visionary burger joint nestled in El Reno, Oklahoma, pioneered this innovative creation. Originally christened “The Depression Burger,” it was a testament to making the most of limited resources, stretching costly meat with an abundance of cheap, flavorful onions.
What began as a necessity quickly evolved into a beloved regional specialty. The process involved pressing a ball of ground beef onto a scorching hot griddle, then piling a generous amount of thinly sliced onions directly on top before smashing them into the patty. As the burger cooked, the onions caramelized beautifully, infusing the meat with a profound sweetness and savory depth that was truly unique. This ingenious method not only made the burgers more affordable but also created an unforgettable flavor and texture profile, transforming a simple necessity into one of the most cherished burgers of all time.
My personal connection to this culinary legacy runs deep. My uncle, Tony, proudly carried on this tradition for many years, operating his own Fried Onion Burger restaurant in my hometown of Edmond, Oklahoma. His establishment was a local institution, a place where the community gathered to enjoy these exquisite burgers, made with the same dedication and authenticity that defined the original. After a long and successful career, Uncle Tony decided to retire, moving to the tranquil mountains of Colorado. It is now my honor and privilege to continue our family’s onion burger legacy, sharing these time-honored techniques and flavors with you.
The allure of the Oklahoma Fried Onion Burger lies in its beautiful simplicity. It’s a testament to how humble ingredients, combined with smart cooking, can create something truly extraordinary. The thinly sliced onions become almost one with the patty, forming a crispy, sweet, and savory crust that defines the burger’s character. This technique, born of necessity, is now celebrated for its incredible flavor and texture, proving that true innovation often arises from adversity.

Essential Ingredients for Your Oklahoma Fried Onion Burger
- Ground beef – For the ultimate juicy and flavorful burger, I highly recommend using an 80/20 blend of ground beef. This means 80% lean meat and 20% fat. The fat content is crucial as it renders down during cooking, keeping the patties incredibly moist and adding a depth of flavor that leaner beef simply can’t achieve.
- Salt + black pepper – These classic seasonings are essential for enhancing the natural flavors of the ground beef. For an elevated taste profile and a touch of professional flair, consider using 2 teaspoons of a quality hamburger seasoning blend, which often includes garlic powder, onion powder, and other spices.
- Yellow onions – The onions are the true star of this burger, so you’ll need more than you might initially think. The key is to slice them incredibly thinly – paper-thin, if possible. This allows them to cook down beautifully, caramelize perfectly, and meld seamlessly into the burger patty. I highly recommend using a mandoline slicer to achieve consistent, ultra-thin slices with ease and precision. If using a knife, take your time to slice them as finely as you can.
- Sliced cheddar cheese – A generous slice of cheese adds a creamy, tangy element that complements the savory beef and sweet onions. While sharp cheddar is a fantastic choice for its robust flavor, classic American cheese slices are also a popular and delicious option, known for their superior meltability.
- Hamburger buns – The bun is the foundation of any great burger. I personally adore the slight sweetness and soft, airy texture of brioche buns, which toast up beautifully and provide a luxurious mouthfeel. However, feel free to use your favorite type of hamburger buns – potato buns or classic sesame seed buns also work wonderfully.
- Vegetable oil – A small amount of vegetable oil is used to lightly toast the hamburger buns, giving them a delightful golden-brown exterior and a slight crispness that prevents them from becoming soggy under the juicy burger.
Step-by-Step Instructions to Craft the Perfect Burger
To ensure you can easily follow along and create this delicious recipe at home, I’ve included detailed step-by-step photos below. For the complete list of ingredient quantities and full written instructions, please refer to the recipe card located at the bottom of this post.

- Prepare the Onions. The secret to this burger lies in the onions. Begin by slicing them as thinly as humanly possible. A sharp chef’s knife can work, but for truly uniform and translucent slices, a mandoline slicer is your best friend. Set the sliced onions aside; you’ll need a generous amount.
- Season and Portion the Meat. In a mixing bowl, gently combine the ground beef with salt and black pepper. If you’re using hamburger seasoning, now is the time to mix it in. Avoid overworking the meat, as this can lead to tough burgers. Divide the seasoned beef into four equal-sized, loose balls.

- Toast the Buns. These burgers cook exceptionally fast, so it’s critical to have your buns ready. Heat your flat top grill, a heavy-bottomed cast iron skillet, or a large griddle to a medium-high temperature. Add about 1/2 teaspoon of vegetable oil to the hot surface and place the hamburger buns, cut-side down. Toast them for approximately 1 minute, or until they are beautifully golden brown and lightly crisp around the edges. Remove and set aside.
- Smash the Ground Beef. Increase the griddle heat to medium-high (around 400°F). Lightly spray the back of a large, sturdy flat metal spatula with cooking spray to prevent sticking. Place each ball of ground beef onto the sizzling hot griddle. Using the spatula, firmly press down on each ball to flatten it into a thin burger patty. Cook undisturbed for 1 minute to allow a delicious crust to form.
- Generously Top with Onions. This is where the magic happens! Take a substantial handful of those thinly sliced onions and pile them directly on top of each smashed burger patty. It might seem like an excessive amount, but don’t worry – the onions will cook down significantly and practically melt into the beef.
- Flip and Infuse Flavor. Carefully slide your spatula under the burger, making sure to scrape up all the onions, and flip each burger. The onions should now be on the bottom, cooking directly on the griddle. This allows them to deeply caramelize and integrate their sweet, savory flavors into the patty. Cook for another 3-4 minutes, or until the onions are deeply browned and the burger is cooked through.
- Melt the Cheese. Once the burgers are nearly done, place a slice of cheddar or American cheese on top of each patty. Allow the cheese to melt for 1-2 minutes, creating a gooey, irresistible layer. You can cover the burgers with a dome or lid for 30 seconds to speed up the melting process if desired.
- Assemble and Serve Immediately. With a spatula, carefully transfer the fried onion burgers onto your pre-toasted buns, ensuring the onion-side is facing up. This traditional “onions up” technique helps prevent the bottom bun from getting soggy. Place the top bun on, and serve these incredible Oklahoma Fried Onion Burgers hot and fresh!

Delightful Optional Toppings and Condiments
Traditionally, Oklahoma Fried Onion Burgers are often served without additional toppings, allowing the pure, unadulterated flavors of the caramelized onions, juicy beef, and melted cheese to shine through on a perfectly toasted bun. This simplicity is part of their authentic charm and how I experienced them growing up.
However, that doesn’t mean you can’t customize your experience! When I visit cherished spots like Tucker’s Onion Burgers in Oklahoma, I sometimes opt for a few additions. Pickles and shredded lettuce offer a refreshing crunch and tangy contrast, while grilled jalapeños, cooked right alongside the onions, introduce a wonderfully spicy kick that I highly recommend for those who enjoy a bit of heat. Feel free to experiment with these optional toppings to personalize your delicious fried onion burger:
- Homemade Burger Sauce – This creamy, tangy sauce is a staple on my Smash Burgers and Animal Style Burgers, and it’s incredibly easy to make. Simply combine mayonnaise, ketchup, finely chopped pickles, and Dijon mustard for a rich, flavorful spread. A thin layer on the bottom bun adds a delicious dimension to your burger.
- Ketchup, mustard or mayonnaise – For a classic approach, you can always stick to your favorite traditional condiments. A dollop of tangy ketchup, spicy mustard, or creamy mayonnaise can perfectly complement the rich flavors of the burger.
- Shredded lettuce or slices of tomato – These fresh additions offer a welcome textural contrast and a burst of vibrant flavor. Shredded lettuce provides a crisp, cool element, while a juicy slice of ripe tomato adds a refreshing sweetness.
- Pickles – Sliced dill pickles are a fantastic choice, providing a sharp, acidic crunch that cuts through the richness of the beef and onions. Whether you prefer store-bought, pickle relish, or even homemade pickles, they are a highly recommended addition. My husband considers them the only necessary topping!
- Jalapeños – For an exciting kick, incorporate thinly sliced jalapeños. You can grill them directly with the onions to soften them and integrate their heat, or add fresh, raw slices for a bolder, brighter spice.
- Bacon – Elevate your burger with the smoky, salty crunch of crispy bacon. Follow my easy oven-baked bacon recipe for perfectly cooked strips to layer onto your fried onion burger.

Expert Tips for a Flawless Fried Onion Burger
- Always Prep Before You Cook. This is arguably the most crucial tip for a perfect fried onion burger. These burgers cook incredibly quickly, and they are at their absolute best when served piping hot and fresh off the griddle. Ensure your buns are toasted, your cheese is sliced, and any desired toppings or condiments are ready and waiting before you even start cooking the patties. This streamlined approach guarantees a smooth and enjoyable cooking experience.
- Heat the Griddle Properly. A screaming hot cooking surface is non-negotiable for achieving that signature crispy crust and juicy interior. Adding burgers to a hot griddle allows for the Maillard reaction – a chemical process that creates those desirable rich, complex flavors and a beautiful sear. Aim for a medium-high heat, ideally around 400 degrees Fahrenheit, to ensure optimal cooking and safety.
- Don’t Overwork the Meat. When combining the ground beef with seasoning and forming the balls, handle the meat as little as possible. Overworking the beef can lead to dense, tough patties. You want a tender, crumbly texture in your burger, which comes from a light touch.
- Consider Equipment Alternatives. While a flat top grill or a large griddle is ideal for cooking multiple burgers simultaneously, you can absolutely make these delicious burgers in a standard skillet. A cast iron skillet is particularly excellent due to its superior heat retention and even distribution. Depending on its size, you might only be able to cook 1-2 burger patties at a time. Adapt your batch cooking accordingly. A cast iron skillet can also be used on an outdoor grill for a smoky touch.
- The “Onions Up” Rule. This is a golden rule passed down from my uncle’s restaurant: always serve the burgers on the buns with the onions facing up. This simple trick prevents the wonderfully juicy, grilled onions from making the bottom bun soggy, ensuring every bite is perfectly textured from start to finish.
- Be Generous with Onions. Trust me on this one – put more onions on the burgers than you think seems reasonable. It sounds humorous, but after countless batches, I’ve learned that you always want more onions. They cook down significantly, so what looks like a mountain of onions will transform into a thin, caramelized layer integrated with the patty. Aim for about ½ cup of thinly sliced onions per burger patty for the ideal onion-to-meat ratio.
- Achieve the Perfect Smash. When smashing the beef balls, use firm, even pressure to create a thin patty. The goal is to maximize contact with the hot griddle for that incredible crust. Smash once, and then leave it alone until it’s time to flip. Resist the urge to press the burger multiple times, as this squeezes out precious juices.

Oklahoma Fried Onion Burger
Ingredients
- 2 cups yellow onions, thinly sliced – I use a mandoline to get ultra thin slices
- 1 pound ground beef, 80/20
- 1 teaspoon black pepper
- 1 teaspoon salt
- ½ teaspoon vegetable oil
- 4 hamburger buns
- 4 slices cheddar cheese, or American cheese
Instructions
-
Thinly slice the onions, using a sharp knife, or a mandoline.
-
Combine the ground beef, salt and pepper, then divide it into 4 quarter-pound balls of beef.
-
Heat a flat top grill, cast iron skillet, or griddle to medium-high heat.
-
Add the vegetable oil to the griddle and place the buns face-down on the griddle. Toast the buns for approximately 1 minute, or until browned around the edges. Set the buns aside.
-
Spray the back of a large flat metal spatula with cooking spray. Place each of the balls of ground beef on the hot griddle. Use the back of the spatula to smash the ground beef into flattened burger patties. Cook for 1 minute.
-
Add approximately ½ cup of thinly sliced onions on top of each smashed burger patty.
-
Smash the onions into the patties. Carefully flip the burgers, so the onions are now on the bottom. Cook for 3-4 minutes.
-
Place a slice of cheese on each burger patty and allow it to melt over the burgers for 1-2 minutes.
-
Use a spatula to flip the fried onion burgers onto the toasted buns, with the onion facing up. Add the top bun and serve immediately.
Notes
- Level up the flavor of the burgers by replacing the salt and pepper with 2 teaspoons of this hamburger seasoning.
- Add any optional toppings of your choice, like burger sauce, ketchup, mayo, mustard, shredded lettuce, tomato slices, pickles or jalapenos.
- Always prep the buns and toppings before cooking the burgers. These burgers cook quickly and are best eaten hot and fresh off the griddle, so you want to make sure the buns are toasted and topped with whatever toppings you’re adding to the burgers, before actually cooking the burgers.
- Always make sure the griddle is hot before adding the burgers. Adding burgers (or any food for that matter) to a hot surface is important for cooking safety. It will also give you a beautiful sear on the outside, while keeping the burgers super juicy on the inside. Fried onion burgers should be cooked over medium-high heat, around 400 degrees fahrenheit.
- If you don’t have a flat top or griddle, you can make the burgers in a skillet. Depending on the size of your skillet, you’ll probably only be able to fit 2 burger patties in the skillet at a time. I recommend a cast iron skillet if you have one available. A cast iron skillet can be used on the stove, or on a grill, to make these burgers.
