Trust me—mushroom jam might sound unusual, but it’s a revelation. I first encountered it on a menu in Spain paired with burrata, crackers, and roasted tomatoes, and I couldn’t stop thinking about it. That memory inspired me to recreate it at home and adapt it with elements from my popular bacon jam recipe.

I added more concentrated umami—white miso paste—to complement the mushrooms, and the result is addictive. Ingredients

  • 3 tablespoons olive oil
  • 1 cup yellow onion, diced
  • 1 pound baby bella mushrooms, diced
  • 3 garlic cloves, minced
  • ¼ cup maple syrup
  • ½ cup brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon white miso paste

Instructions

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the diced onion and cook, stirring occasionally, until caramelized, about 15 minutes.
  • Add the mushrooms and garlic. Sauté until the mushrooms begin to release their liquid, about 8–10 minutes, then continue cooking 2–3 minutes more.
  • Stir in maple syrup, brown sugar, and apple cider vinegar. Cook until the mixture thickens and most of the liquid evaporates, about 5–7 minutes.
  • Mix in the miso paste and cook 1–2 minutes more. Taste and add salt if needed.
  • Remove from heat, let cool, then transfer to an airtight container. Store in the refrigerator for up to 7 days.

Notes

  • For a smoother jam: Pulse the cooled mixture a few times in a food processor. Leave some texture so it still feels like a spread.
