  • 2 pounds beef chuck roast
  • ¼ cup barbacoa seasoning
  • ¼ cup fresh lime juice
  • ¼ cup apple cider vinegar
  • 2 cups beef broth
  • 2 bay leaves

Instructions

  • Cut the beef chuck roast into large chunks and season all over with the barbacoa seasoning.
  • Set the Instant Pot to “Sauté” on normal heat. When it indicates hot, add the beef pieces and sear on all sides for 2–3 minutes, until a crust forms. Cancel the sauté function.
  • Pour the lime juice, apple cider vinegar, and beef broth into the pot. Tuck in the bay leaves.
  • Close the lid and set the steam valve to sealing. Use the manual or pressure cook setting on high for 40 minutes.
  • When cooking completes, allow a natural pressure release for 10 minutes, then carefully move the valve to venting to release any remaining pressure.
