Tips for making the best burgers every time

Seasoning for great flavor: For 1 pound of ground beef, use about 1 tablespoon of hamburger seasoning and 1 teaspoon Worcestershire sauce. I recommend 80/20 ground beef to keep burgers juicy.

Form consistent patties: A kitchen scale and a burger press make it easy to form uniform patties. I like 6-ounce patties — big and juicy without being oversized.

Prevent shrinking: Press a small indentation in the center of each patty with your thumb so they cook evenly and don’t dome up on the grill.

Don’t flatten on the grill: Avoid pressing burgers with a spatula while cooking. That squeezes out juices and makes the burger less flavorful.

Timing for doneness: A 1-inch-thick patty cooked 4–5 minutes per side over medium-high heat yields medium. Add about 1 minute per side for medium-well and 6–7 minutes per side for well-done.

Rest before assembling: Don’t put burgers directly onto buns off the grill. Let them rest 5 minutes on a separate plate to redistribute juices — this keeps burgers juicy and prevents soggy buns.
