  • Once the sous vide water has heated to the target temperature, carefully place the short ribs in their bags into the sous vide rack or directly into the water.
  • If you do not have a vacuum sealer, use the “water displacement method”: place the sealed bag (leaving a small opening at the top) almost entirely under the water. The water pressure will force the air out around the food. Once air is removed, seal the bag completely and fully submerge.
  • Cook the short ribs for 4 hours in the sous vide bath for optimal tenderness.
  • After removing the short ribs from the sous vide, pat them very dry. Sear them on each side for 10-15 seconds in a cast iron skillet or grill pan over high heat until a rich crust forms.
