After more than two decades in San Diego, I’ve fallen in love with the city’s food scene—and the California burrito is one of its brightest stars. This recipe stays true to the taco-shop classic: simple, bold ingredients assembled with care. My one small twist is a double-hit of cheese—both a crispy cheese layer and shredded cheddar inside—which adds great texture and flavor.

You can make everything from scratch or use store-bought components to speed things up. Homemade fries, guacamole, and pico de gallo are delicious, but quality pre-made options work, too. I do recommend preparing the carne asada at home when possible; a simple carne asada seasoning mixed into a quick marinade (oil, citrus, and a splash of soy sauce) gives the steak real depth and restaurant-style flavor.

I often save a little carne asada after a barbecue just so I can make these burritos the next day. They’re an easy, craveable way to revive leftovers into something spectacular.

Carne Asada

  • 1 pound skirt steak (or flank steak)
  • 1 tablespoon olive oil (or vegetable oil)
  • 2 tablespoons carne asada seasoning

Burritos

  • 1 cup french fries (prepared)
  • 2 cups shredded cheddar cheese
  • 4 large flour tortillas
  • 1 cup guacamole
  • 1 cup pico de gallo

Instructions

Make the carne asada

  1. Rub the steak with olive oil, then coat evenly with carne asada seasoning. If you have time, marinate up to 8 hours for deeper flavor using a simple marinade of oil, citrus, and a splash of soy sauce.
  2. Preheat a grill over high heat.
  3. Grill the steak 3–5 minutes per side until it reaches about 135°F for medium-rare. Skirt steak cooks faster (about 3–4 minutes per side); flank takes closer to 5 minutes per side.
  4. Remove from the grill, loosely tent with foil, and let the steak rest while you prepare the other components.

Prepare the fillings

  1. Cook frozen fries in an air fryer or oven until crispy. You can toss them with a little carne asada seasoning after cooking for extra flavor, if desired.
  2. Prepare guacamole and pico de gallo if making from scratch, or use store-bought to save time.

Assemble the burritos

  1. Heat a large skillet or griddle over medium-high. Add 1/4 cup shredded cheddar in the center and cook until it crisps, about 3–4 minutes. Place a tortilla on top of the crispy cheese, press down, then flip the tortilla so the cheese is on top.
  2. Layer 1/4 cup guacamole, 1/4 cup pico de gallo, 1/4 cup cooked french fries, and 1/4 pound diced carne asada in the center. Top with 1/4 cup shredded cheddar.
  3. Fold the ends of the tortilla over the filling, then roll tightly to form a burrito. Repeat to make four burritos.
  4. Return the skillet to medium-high heat. Place each burrito seam-side down and toast for 3–4 minutes, spray lightly with cooking spray if desired, then flip and toast the other side for 3–4 minutes until golden and crisp.
  5. Remove from heat, slice in half, and serve with your favorite salsa, hot sauce, or sour cream.

Notes

  • For extra flavor, toss cooked fries with a pinch of carne asada seasoning before adding to the burritos.
  • You can make the carne asada ahead of time. Store the whole cooked steak in an airtight container in the refrigerator for up to 2 days. Dice and reheat in a skillet for 2–3 minutes before assembling.
  • If you don’t have a grill, sear the steak in a very hot cast-iron skillet or grill pan for similar results. Cook 4–5 minutes per side for medium-rare, then rest before slicing.
  • Leftover assembled burritos keep in the refrigerator for up to one week. Reheat in an air fryer, skillet, or microwave.
  • To freeze: wrap each assembled burrito in foil, place in a zipper bag, and freeze up to 6 months. Thaw and microwave for about 4 minutes, then crisp in a skillet or air fryer for a golden crust.
