Ingredients

  • 2 boneless, skinless chicken breasts
  • 3 tablespoons chicken wing seasoning
  • ½ cup buffalo sauce, divided
  • 8 cups mixed greens (or chopped romaine)
  • ½ cup shredded carrots
  • ½ cup diced celery
  • ½ cup finely diced red onion
  • ¼ cup ranch dressing
  • 1 cup shredded Monterey jack cheese
  • 1 avocado, sliced
  • ½ cup diced green onions

Instructions

  1. Slice the chicken breasts in half lengthwise so they cook evenly. Season on all sides with the chicken wing seasoning.
  2. Air fry at 400°F for 10 minutes. If using the oven, preheat to 425°F and bake the chicken on a sheet for about 13 minutes.
  3. While the chicken cooks, toss the greens with shredded carrots, diced celery, and red onion. Mix ¼ cup buffalo sauce with ¼ cup ranch dressing and toss with the salad to coat.
  4. After 10 minutes in the air fryer, flip the chicken and brush with the remaining ¼ cup buffalo sauce. Air fry 2 more minutes. For oven directions, flip and glaze then return to the oven for 2 minutes.
  5. Remove the chicken, brush with any remaining sauce, then slice or dice it. Divide the dressed salad among bowls and top with the chicken, shredded cheese, avocado, and green onions.
