You can make everything from scratch or use store-bought components to speed things up. Homemade fries, guacamole, and pico de gallo are delicious, but quality pre-made options work, too. Carne Asada
- 1 pound skirt steak (or flank steak)
- 1 tablespoon olive oil (or vegetable oil)
- 2 tablespoons carne asada seasoning
Burritos
- 1 cup french fries (prepared)
- 2 cups shredded cheddar cheese
- 4 large flour tortillas
- 1 cup guacamole
- 1 cup pico de gallo
Instructions
Make the carne asada
- Rub the steak with olive oil, then coat evenly with carne asada seasoning. If you have time, marinate up to 8 hours for deeper flavor using a simple marinade of oil, citrus, and a splash of soy sauce.
- Preheat a grill over high heat.
- Grill the steak 3–5 minutes per side until it reaches about 135°F for medium-rare. Skirt steak cooks faster (about 3–4 minutes per side); flank takes closer to 5 minutes per side.
- Remove from the grill, loosely tent with foil, and let the steak rest while you prepare the other components.
Prepare the fillings
- Cook frozen fries in an air fryer or oven until crispy. You can toss them with a little carne asada seasoning after cooking for extra flavor, if desired.
- Prepare guacamole and pico de gallo if making from scratch, or use store-bought to save time.
Assemble the burritos
- Heat a large skillet or griddle over medium-high. Add 1/4 cup shredded cheddar in the center and cook until it crisps, about 3–4 minutes. Place a tortilla on top of the crispy cheese, press down, then flip the tortilla so the cheese is on top.
- Layer 1/4 cup guacamole, 1/4 cup pico de gallo, 1/4 cup cooked french fries, and 1/4 pound diced carne asada in the center. Top with 1/4 cup shredded cheddar.
- Fold the ends of the tortilla over the filling, then roll tightly to form a burrito. Repeat to make four burritos.
- Return the skillet to medium-high heat. Place each burrito seam-side down and toast for 3–4 minutes, spray lightly with cooking spray if desired, then flip and toast the other side for 3–4 minutes until golden and crisp.
- Remove from heat, slice in half, and serve with your favorite salsa, hot sauce, or sour cream.
Notes
- For extra flavor, toss cooked fries with a pinch of carne asada seasoning before adding to the burritos.
- You can make the carne asada ahead of time. Store the whole cooked steak in an airtight container in the refrigerator for up to 2 days. Dice and reheat in a skillet for 2–3 minutes before assembling.
- If you don’t have a grill, sear the steak in a very hot cast-iron skillet or grill pan for similar results. Cook 4–5 minutes per side for medium-rare, then rest before slicing.
- Leftover assembled burritos keep in the refrigerator for up to one week. Reheat in an air fryer, skillet, or microwave.
- To freeze: wrap each assembled burrito in foil, place in a zipper bag, and freeze up to 6 months. Thaw and microwave for about 4 minutes, then crisp in a skillet or air fryer for a golden crust.
