It’s now a fridge staple because it comes together so quickly. I blend it in about 5 minutes and use it on salads, grain bowls, and grilled meats. At a recent neighborhood gathering the first reaction when I served this dressing was a surprised “WOW!”—and it’s easy to see why.

  • White miso paste (shiro miso) – fermented the shortest time, white miso is slightly sweet and milder than other types. I recommend using white miso here so it complements the dressing without dominating it.
  • Kewpie mayonnaise – any mayonnaise will work, but Japanese-style mayonnaise like Kewpie is richer and creamier because it’s made with egg yolks only. If you prefer a classic mayo, it will still yield a delicious dressing.

Instructions

Ingredients

  • 2 tablespoons miso paste
  • 1 tablespoon apple cider vinegar
