Ingredients

Cauliflower Nachos

  • 2 heads cauliflower
  • ¼ cup olive oil
  • 2 tbsp taco seasoning
  • ½ cup red onions, thinly sliced
  • ½ cup jalapenos, sliced
  • 8 oz Cabot Pepper Jack Cheese, grated into approx. 3 cups

Optional Toppings

  • Pico de gallo
  • Avocado, diced
  • Fresh cilantro, chopped

Creamy Chipotle Sauce

  • ½ cup sour cream
  • 3 tbsp lime juice
  • 1 clove garlic, crushed
  • 1 chipotle pepper in adobo sauce, chopped
  • 1 tsp adobo sauce
  • 1 tbsp honey
  • ½ tsp salt

Instructions

Cauliflower Nachos

  1. Preheat the oven to 400°F (200°C).
  2. Slice the stems off both heads of cauliflower, then slice each head in half through the middle.
  3. Place the cauliflower head halves, flat side down on a cutting board, and cut into ¼ inch slices.
  4. The cauliflower slices will naturally break into “chips” once sliced. If any pieces are too large, slice them in half.
  5. Place the cauliflower chips on a large baking sheet. Drizzle with olive oil and sprinkle with taco seasoning. Toss to coat evenly.
  6. Place the baking sheet in the preheated oven for 15 minutes.
  7. Remove the cauliflower from the oven. Evenly distribute the thinly sliced red onions, jalapeños, and grated Cabot Pepper Jack Cheese over the roasted cauliflower.
  8. Return the baking sheet to the oven for another 10 minutes, or until the cheese is bubbly and melted.
