Key Ingredients for Your Poblano Enchiladas

Crafting these delectable enchiladas begins with selecting the finest ingredients. Each component plays a crucial role in building the layers of flavor that make this dish so memorable.

  • Poblano Peppers: These mild to medium-spicy peppers are the star of our dish, offering a sturdy, flavorful vessel for the filling. Roasting them softens their flesh and imparts a wonderful smoky char. While this recipe guides you through oven roasting, feel free to explore other methods. For a comprehensive guide on achieving perfectly roasted poblanos, including grilling and stovetop techniques, along with valuable tips and tricks, check out my dedicated post on Roasted Poblano Peppers.
  • Ground Beef: Lean ground beef forms the hearty base of our savory filling. Its robust flavor pairs beautifully with the Mexican spices. For a lighter alternative or if you prefer poultry, ground turkey can be used with equally delicious results.
  • Chili Powder: A cornerstone of Mexican cuisine, chili powder provides a warm, earthy, and slightly smoky flavor. It’s essential for achieving that classic enchilada taste.
  • Paprika: Sweet or smoked paprika adds a vibrant color and a subtle peppery sweetness, enhancing the overall depth of the spice blend.
  • Ground Cumin: This aromatic spice brings a distinctive earthy and warm note that is quintessential in many Mexican dishes, tying all the flavors together.
  • Dried Oregano: Mexican oregano, if you can find it, offers a more pungent, citrusy, and earthy flavor than Mediterranean oregano, perfect for this recipe. Otherwise, standard dried oregano works wonderfully.
  • Onion Powder: For a concentrated onion flavor without the moisture or texture of fresh onion, onion powder is a convenient and effective addition to our spice mix.
  • Garlic Powder: Similar to onion powder, garlic powder delivers a potent garlic punch, ensuring the ground beef filling is rich and savory.
  • Salt: Essential for seasoning, salt brings out the best in all the other ingredients, balancing the flavors.
  • Beef Broth: A splash of beef broth adds moisture and richness to the ground beef mixture, creating a more tender and flavorful filling that simmers perfectly with the spices.
  • Shredded Cheddar Cheese: A generous layer of shredded cheddar cheese melts beautifully over the top, adding a creamy, savory finish. To introduce an extra kick, consider using pepper jack or a spicy cheddar blend.
  • Red Enchilada Sauce: The luscious red enchilada sauce ties the entire dish together. I highly recommend using my easy homemade recipe linked here for an unparalleled flavor experience that truly elevates these enchiladas.

Effortless Step-by-Step Instructions

Follow these simple steps to create a show-stopping meal that’s bursting with authentic Mexican flavors.

Prepping the Poblano Peppers:

The foundation of these outstanding enchiladas is perfectly roasted poblano peppers. This step ensures they are tender, flavorful, and ready to be stuffed.

  • Begin by preheating your oven broiler to its high setting. This intense heat is crucial for charring the peppers quickly and effectively.
  • Arrange the poblano peppers evenly on a baking sheet. Ensure they have enough space to char without steaming each other.
  • Carefully place the baking sheet under the preheated broiler. Keep a close eye on them, as broilers can vary in intensity.
  • Roast the peppers for approximately 5 minutes per side, or until their skin is visibly blackened and bubbling. This charring process is what gives them their delicious smoky flavor.
  • Once charred, remove the peppers from the oven and set them aside. Allow them to cool sufficiently so they are comfortable to handle. This cooling period also helps to steam the peppers, making the skin easier to remove.

Preparing the Enchilada-Spiced Ground Beef:

While your poblanos cool, you can start on the rich and flavorful ground beef filling.

  • Once the peppers are done, switch your oven setting from broiler to bake, and preheat it to 350°F (175°C).
  • In a large skillet, place your ground beef over medium heat. Break it apart with a spoon as it cooks.
  • Cook the ground beef thoroughly until it’s completely browned and no longer pink.
  • Carefully drain any excess grease from the skillet. This helps keep the filling from being oily.
  • Now, it’s time to infuse the beef with flavor! Add the chili powder, paprika, ground cumin, dried oregano, onion powder, garlic powder, and salt to the skillet. Stir well to ensure the spices are evenly distributed and coat all the beef. Cook for another minute to toast the spices, releasing their aromatic oils.
  • Pour the beef broth over the seasoned ground beef. This adds moisture and creates a saucy, tender filling.
  • Reduce the heat to low, cover the skillet, and let the mixture simmer gently for 10 minutes. This allows the flavors to meld beautifully.
  • While the beef simmers, carefully handle the cooled poblano peppers. Using a sharp knife, slice a large slit down the middle of one side of each poblano pepper. Be mindful not to cut all the way through to the other side; you want to create a pocket.
  • Gently open each pepper and remove the seeds from the middle. You can use a spoon or your fingers for this. If desired, you can also peel off the charred skin, though many prefer to leave it on for extra flavor.

Assembling and Baking Your Enchiladas:

Now comes the satisfying part – stuffing and baking your flavor-packed poblano enchiladas!

Generously spoon the savory ground beef mixture into each prepared poblano pepper. Don’t be shy; ensure they are well-filled. Arrange the stuffed peppers neatly in a large casserole dish, making sure they fit snugly but aren’t overcrowded.

Evenly pour your delicious homemade red enchilada sauce over all the stuffed peppers, ensuring they are thoroughly coated. This sauce is key to the enchilada experience, so make sure every pepper gets its share. Finally, sprinkle a generous layer of shredded cheese over the top of the sauced peppers. The cheese will melt into a golden, gooey crust, adding another layer of irresistible flavor and texture.

Place the casserole dish into your preheated 350°F (175°C) oven. Bake for 15-20 minutes, or until the cheese is melted and bubbly, and the peppers are heated through. The edges of the cheese might even turn a light golden brown, indicating perfection.

Serving Suggestions and Toppings:

Once baked to perfection, these stuffed poblano enchiladas are ready to be customized with your favorite toppings. The enchiladas inherently have a pleasant warmth and spice, which can be wonderfully balanced with cooling accompaniments. Consider a dollop of sour cream or a refreshing scoop of my homemade Avocado Cream Sauce for a creamy counterpoint. A sprinkle of fresh cilantro, diced avocado, or a squeeze of lime juice can add brightness and a burst of freshness. On this occasion, I opted for a delightful drizzle of Litehouse Cotija Cilantro Dressing – a personal favorite that adds an extra layer of zesty, herbaceous flavor. Don’t hesitate to experiment with what you love!

Tips for Perfect Poblano Enchiladas

To ensure your Stuffed Poblano Enchiladas turn out perfectly every time, keep these helpful tips in mind:

  • Choose the Right Poblanos: Look for large, firm, dark green poblano peppers without blemishes. Larger peppers are easier to stuff.
  • Don’t Skip Roasting: Roasting the poblanos is crucial. It softens their texture, makes them easier to handle, and infuses them with a wonderful smoky flavor that defines the dish.
  • Control the Spice: Poblanos are typically mild, but their heat can vary. If you’re sensitive to spice, you can gently scrape out some of the veins and seeds (where most of the capsaicin resides) after roasting.
  • Homemade Sauce is Key: While store-bought enchilada sauce can work, making your own offers superior flavor and allows you to control the ingredients and spice level. My homemade red enchilada sauce recipe is designed for ease and maximum flavor.
  • Prevent Overcrowding: When arranging peppers in the casserole dish, give them a little space. Overcrowding can lead to uneven cooking and less desirable texture.
  • Rest Before Serving: Like many baked dishes, allowing the enchiladas to rest for 5-10 minutes after coming out of the oven allows the flavors to settle and makes them easier to serve.

Storage and Meal Prep

These Stuffed Poblano Enchiladas are excellent for meal prepping or enjoying as leftovers:

  • Refrigeration: Store any leftover enchiladas in an airtight container in the refrigerator for up to 3-4 days.
  • Reheating: To reheat, place individual portions in the microwave until warmed through, or cover the casserole dish with foil and bake at 350°F (175°C) until heated evenly.
  • Freezing: These enchiladas freeze well! Assemble them in a freezer-safe casserole dish, cover tightly with plastic wrap and then foil, and freeze for up to 2-3 months. Thaw overnight in the refrigerator before baking as directed, or bake from frozen (this will significantly increase baking time).
  • Advance Prep: The ground beef filling can be made a day or two in advance and stored in the refrigerator. The red enchilada sauce can also be prepared several days ahead. This streamlines the assembly process on a busy weeknight.
