  • ½ cup red onion, diced
  • 1 jalapeño, seeded and minced (adjust to taste)
  • 1 tablespoon lime juice, freshly squeezed
  • ½ teaspoon ground cumin
  • 1 tablespoon fresh cilantro, finely chopped

Instructions

  1. Heat a grill to medium heat.
  2. Place the husked tomatillos on a piece of foil on the grill. Turn occasionally for 8-10 minutes, or until they become slightly charred and softened on the outside. Remove from grill and set aside.
  3. Add the ear of corn directly onto the grill grates. Cook for 10-12 minutes, turning occasionally, until the corn kernels begin to brown and char slightly. Remove from the grill and allow to cool slightly.
  4. While tomatillos and corn are grilling, add the water and salt (or vegetable broth) to a medium saucepan. Place on the stove over high heat and bring to a rolling boil.
  5. Once the water boils, remove the saucepan from the heat immediately and stir in the dry couscous.
  6. Cover the saucepan with a lid and let it stand undisturbed for 5 minutes. After 5 minutes, remove the lid and fluff the couscous gently with a fork to separate the grains.
  7. Carefully chop the roasted tomatillos into small pieces and add them to the fluffed couscous.
  8. Using a sharp knife, remove the grilled corn kernels from the cob and add them to the couscous mixture.
