  • Add 1 tablespoon of olive oil to a large skillet and heat over medium-high heat.
  • Add the diced onion, carrots, celery, minced jalapeno, and garlic. Sauté for 4-5 minutes until vegetables begin to soften.
  • Add the ground chicken to the skillet and cook, breaking it up with a spoon, until it is fully browned and cooked through.
  • Stir in the ¼ cup buffalo sauce, diced tomatoes with green chilies, chili powder, cumin, paprika, black pepper, and kosher salt.
  • Combine all ingredients thoroughly, reduce the heat to low, and simmer for 5-10 minutes to allow the flavors to meld.
