This exceptional 18-month aged cheddar isn’t just sprinkled on top; it’s generously mixed into the casserole batter and then layered again on the surface. The result is a profound nutty and tangy depth that elevates the entire dish, contributing a magnificent flavor profile and an unbelievably delicious texture that simply melts in your mouth.

Key Ingredients for Southern Perfection

Crafting the perfect cheesy corn casserole begins with selecting high-quality ingredients that contribute to its rich flavor and delightful texture. Here’s a detailed look at what you’ll need:

  • Jiffy Corn Muffin Mix: This beloved boxed mix is a cornerstone of many Southern corn casserole recipes due to its convenience and consistent results. It provides a perfect balance of cornmeal and leavening agents, ensuring a light and fluffy texture, along with a touch of sweetness. You can readily find it in most American grocery stores. If it’s unavailable or you prefer a homemade option, please refer to our instructions below for making corn muffin mix from scratch.
  • Canned Corn: For this recipe, you’ll need a standard can of whole kernel corn. Make sure to drain this completely before adding it to the mixture. The kernels provide a pleasant bite and burst of fresh corn flavor within the creamy casserole.
  • Canned Creamed Corn: Often labeled as “cream style” corn, this ingredient is crucial for achieving the casserole’s signature creamy texture. Unlike the whole kernel corn, it is essential that you do not drain the can of creamed corn. The liquid and pureed corn provide the necessary moisture and richness that binds the casserole together, giving it that luxurious, velvety mouthfeel.
  • Sour Cream: Adding a cup of sour cream introduces a delightful tanginess and contributes significantly to the casserole’s moist and tender consistency. It reacts with the leavening agents in the corn muffin mix, helping to create a lighter texture and a more complex flavor profile.
  • Unsalted Butter: Melted unsalted butter adds a crucial layer of richness and flavor, complementing the corn and cheese beautifully. Using unsalted butter allows you to control the overall saltiness of the dish, ensuring it’s seasoned to perfection.
  • Salt: A teaspoon of salt is essential to enhance all the flavors in the casserole, bringing out the natural sweetness of the corn and the tang of the cheese.
  • Black Pepper: Freshly ground black pepper adds a subtle warmth and a hint of spice, balancing the richness of the dairy and corn.
  • Cabot Seriously Sharp Cheddar Cheese: This is the star ingredient that truly transforms this casserole. We recommend Cabot’s 18-month aged Seriously Sharp Cheddar for its exceptional flavor—nutty, tangy, and robust. You’ll find this premium cheddar in the deli section of well-stocked grocery stores. Its superior melting qualities and intense flavor make it ideal for both mixing into the casserole and creating that irresistible bubbly crust on top. Step-by-Step Instructions for Easy Corn Casserole

Follow these simple steps to create a truly delicious and comforting cheesy corn casserole with minimal effort:

  1. Prepare Your Oven and Butter: Begin by preheating your oven to 350°F (175°C). Next, melt the unsalted butter. You can do this quickly in the microwave in a microwave-safe bowl for 30-60 seconds, or gently on the stovetop until fully liquid.
  2. Drain the Corn (Carefully!): Open both cans of corn. Drain the liquid completely from the can of whole kernel corn. However, it is crucial that you DO NOT drain the can of creamed corn; its liquid is essential for the casserole’s creamy consistency.
  3. Combine All Ingredients: In a large mixing bowl, combine the Jiffy corn muffin mix, the entire undrained can of creamed corn, the drained can of whole kernel corn, sour cream, the melted butter, salt, and black pepper. Stir these ingredients together until they are just combined. Avoid overmixing, as this can lead to a tougher texture.
  4. Add Initial Cheese Layer: Now, stir in 1/2 cup of the shredded Cabot Seriously Sharp Cheddar Cheese into the mixture. This initial incorporation of cheese ensures that every bite of the casserole is infused with that wonderful cheesy flavor from within.
  5. Prepare Baking Dish: Lightly coat the inside of an 8-inch x 8-inch baking dish with cooking spray or a thin layer of butter. This prevents the casserole from sticking and ensures easy serving.
  6. Transfer and Bake (Initial Phase): Pour the corn casserole mixture from the mixing bowl evenly into the prepared baking dish. Place the dish into your preheated oven and bake, uncovered, for 1 hour. During this time, the casserole will begin to set and develop a light golden crust. To check for doneness, a knife inserted into the center should come out mostly clean.
  7. Add Final Cheese Topping: Carefully remove the casserole from the oven after the initial baking period. Sprinkle the remaining 1 cup of shredded Cabot Seriously Sharp Cheddar Cheese evenly over the top surface of the casserole. This creates a beautiful, bubbly, and deeply flavored cheese crust.
  8. Bake Again to Golden Perfection: Return the casserole to the oven and bake for an additional 10 minutes, or until the cheese topping is melted, bubbly, and has turned a rich golden brown. Keep a close eye on it during this final stage to prevent over-browning.
  9. Cool and Serve: Once the casserole achieves its perfect golden hue, remove it from the oven. Allow it to cool for about 10 minutes before serving. This cooling period is important as it allows the casserole to set further, making it easier to scoop and ensuring that the creamy texture is just right. Use a serving spoon to dish out generous portions of this comforting side.

Pro Tips and Recipe Notes

To ensure your cheesy corn casserole turns out perfectly every time, and to customize it to your liking, keep these helpful tips and notes in mind:

  • Serving Size and Scaling: This recipe is designed to generously serve 4-6 people as a satisfying side dish. If you’re hosting a larger gathering or simply want more delicious leftovers, you can easily double the recipe. For a doubled batch, simply use twice the amount of each ingredient and bake the casserole in a larger 9-inch x 13-inch baking dish to accommodate the increased volume. Baking time may remain similar but check for doneness.
  • Adjusting Sweetness: The Jiffy corn muffin mix contains some sugar, and corn itself has a natural sweetness, making this casserole subtly sweet. If you prefer a noticeably sweeter casserole, you can easily enhance it. Before baking, simply mix in an additional 2 tablespoons of granulated sugar with the other ingredients. This small adjustment can cater to those who enjoy a dessert-like quality in their corn dishes.
  • Achieving a Lighter Texture: For a casserole with a slightly lighter, almost soufflé-like texture, consider incorporating two large eggs into the mixture. Whisk them lightly before adding them to the other casserole ingredients. The eggs act as a binder and add structure, resulting in a less dense and more airy consistency that some prefer.
  • Slow Cooker (Crock Pot) Warning: While the idea of a slow cooker might seem appealing for convenience, we strongly advise against making this corn casserole in a crock pot. Extensive testing has shown that the texture achieved in a slow cooker is significantly different and often less desirable than when baked in the oven. The oven baking allows for the proper setting and the development of that delicious golden crust, which a slow cooker cannot replicate.
  • Make Ahead Option: This casserole is fantastic for meal prepping or holiday planning! You can prepare the casserole mixture up to 2 days in advance. Simply combine all the ingredients (except the final cheese topping) in a bowl, transfer it to your baking dish, cover it tightly with plastic wrap, and store it in the refrigerator. When you’re ready to bake, remove it from the fridge about 30 minutes before baking to allow it to come closer to room temperature, then proceed with the baking instructions as usual.
  • Freezing Not Recommended: Unfortunately, this recipe does not freeze well. The sour cream in the recipe tends to separate and can become grainy when thawed, negatively affecting the casserole’s creamy texture. For the best quality and enjoyment, this cheesy corn casserole is best made and consumed fresh, or within 5 days if stored properly in an airtight container in the refrigerator.
  • Alternative Baking Dishes: If you don’t have an 8-inch x 8-inch baking dish, an 8-inch cast iron skillet makes an excellent alternative. The cast iron will give the casserole a beautifully crispier bottom and edges, adding another layer of texture and flavor that many find delightful. Ensure it’s well-greased regardless of the dish you choose.

Crafting Your Own Corn Muffin Mix

If Jiffy corn muffin mix isn’t available in your local grocery store, or if you simply prefer the satisfaction of making ingredients from scratch, creating your own corn muffin mix is incredibly easy. This homemade version ensures you can still enjoy this delicious casserole while having full control over the ingredients.

Here’s how to make it in just two simple steps:

  1. Combine Dry Ingredients: In a medium-sized mixing bowl, whisk together the following dry ingredients: 2/3 cup of all-purpose flour, 1/2 cup of fine yellow cornmeal (not coarse polenta), 1/3 cup of granulated sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. Ensure all ingredients are thoroughly combined to prevent pockets of leavening.
  2. Incorporate Wet Ingredient: Add 2 tablespoons of vegetable oil to the dry mixture. Continue to whisk until the oil is fully incorporated and the mixture is smooth and lump-free. The oil helps to tenderize the flour and cornmeal, contributing to the desired texture.

Once prepared, simply use this homemade mixture in place of the boxed Jiffy mix in our cheesy corn casserole recipe. It yields a similar delightful flavor and texture, ensuring your casserole is always a success.

Frequently Asked Questions

To help you perfect your cheesy corn casserole and answer common queries, we’ve compiled a list of frequently asked questions:

  • What is the texture of this casserole? This corn casserole boasts a unique and appealing texture that sits somewhere between several familiar favorites. It’s creamier than traditional cornbread, yet holds its shape more firmly than a runny corn pudding or simple creamed corn. Expect a moist, tender, and somewhat fluffy consistency, akin to a savory corn soufflé or a very moist corn cake. It’s comforting and satisfying without being overly dense or dry.
  • Can I make this recipe gluten-free? Absolutely! To adapt this recipe for a gluten-free diet, the main modification required is in the corn muffin mix. If you’re using a store-bought mix, ensure it is certified gluten-free. Alternatively, when making our homemade corn muffin mix from scratch (recipe provided above), simply substitute an equal amount of your favorite gluten-free all-purpose flour blend for the regular all-purpose flour. Most other ingredients in this casserole, such as canned corn, creamed corn, sour cream, butter, salt, pepper, and cheese, are naturally gluten-free.
  • How long will leftovers last, and how should I reheat them? Leftover cheesy corn casserole is just as delightful as the fresh batch! Store any leftovers in an airtight container in the refrigerator, where they will remain fresh and delicious for up to 5 days. Reheating is a breeze:
    • Microwave: For quick individual portions, simply place a serving on a microwave-safe plate and heat for approximately 2 minutes, or until warmed through.
    • Oven: To reheat the entire casserole or a larger portion while maintaining a crispy top, cover the baking dish loosely with aluminum foil and place it in a preheated 350°F (175°C) oven for 15-20 minutes, or until heated thoroughly.
  • Can I make this dairy-free? Making this casserole dairy-free would require several substitutions. You would need to use a dairy-free sour cream alternative, dairy-free butter, and a high-quality dairy-free cheddar cheese shred that melts well. While the flavor and texture might vary slightly from the original, it is certainly possible to adapt.
  • Can I add other vegetables to the casserole? Yes, you can! This casserole is quite versatile. Diced bell peppers (red, green, or yellow), finely chopped onions, or even a few jalapeño slices (for a touch of heat) can be added to the mixture along with the corn. Ensure any added vegetables are finely chopped so they cook evenly and integrate well into the casserole’s texture.
  • What if I don’t have Jiffy mix or don’t want to use it? As detailed in the “Crafting Your Own Corn Muffin Mix” section, you can easily make your own mix from scratch using flour, cornmeal, sugar, baking powder, and salt. This gives you full control and is a great option if Jiffy isn’t available or if you prefer a less processed alternative.

Cheesy Corn Casserole

This traditional Southern Corn Casserole is made even better with the addition of cheddar cheese! It’s easy to make with Jiffy mix, canned corn and just 5 minutes of prep time.
Servings: 6 people
Prep Time: 5
Cook Time: 1 10
Total Time: 1 15
Author: Whitney Bond
Course: Side Dish
Cuisine: American

Ingredients

  • 8 ounces Jiffy corn muffin mix
  • 15 ounce can corn, drained
  • 15 ounce can cream style corn, do not drain!
  • 1 cup sour cream
  • ¼ cup unsalted butter, melted
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 ½ cups Cabot Seriously Sharp Cheddar Cheese, shredded – divided

Instructions

  • Preheat the oven to 350°F (175°C).
  • Melt the butter in the microwave for 30-60 seconds.
  • Drain the canned corn, but DO NOT drain the can of creamed corn.
  • In a large bowl, combine the corn muffin mix, entire can of creamed corn, the drained can of corn, sour cream, melted butter, salt, pepper and ½ cup shredded cheddar cheese.
  • Pour into a greased 8-inch x 8-inch baking dish.
  • Cook uncovered for 1 hour, or until the center of the casserole is completely set and a knife inserted comes out mostly clean.
  • Remove from the oven and sprinkle the remaining 1 cup shredded cheddar cheese evenly on top of the casserole.
  • Place back in the oven and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
  • Remove from the oven and wait 10 minutes before serving to allow it to set.

Notes

  • This recipe will serve 4-6 people as a side dish. If you’d like to double the recipe to serve 8-10 people, simply double the ingredient amounts and bake the casserole in a 9-inch x 13-inch baking dish.
  • I do not recommend making this recipe in the crock pot (slow cooker). I tested it when I first developed this recipe, and the texture was not the same or as desirable as when baked in the oven.
  • You can prep the casserole ahead of time. Feel free to mix all of the ingredients together (excluding the final cheese topping) up to 2 days in advance. Store the casserole covered tightly in the refrigerator until you’re ready to bake it.
  • I do not recommend freezing this recipe. Sour cream does not freeze well; it can separate and become grainy upon thawing, which will negatively impact the casserole’s creamy texture. Therefore, this casserole is best made and eaten fresh, or within 5 days if stored in the refrigerator.
  • To make the recipe gluten-free, you will need to make your own corn muffin mix from scratch (the recipe is provided in the blog post above). Simply substitute a gluten-free all-purpose flour blend in place of the regular all-purpose flour in the homemade muffin mix. The other ingredients in the casserole are naturally gluten-free.
  • Leftover corn casserole can be stored in an airtight container in the refrigerator for up to 5 days. It can easily be reheated in the microwave for 2 minutes for individual portions. To reheat it in the oven, cover the casserole loosely with foil and place it in a 350°F (175°C) oven for 15-20 minutes.
